Here is a great recipe for Pancake Day by TV chef Marcus Bean – Light and Fluffy Blueberry Pancake seems simply delicious.
Good looking and self-taught chef, Marcus Bean, won Iron chef UK in 2010 on Channel 4.
Preparation time: 5 minutes
Cooking Time: 5 minutes
Ingredients:
135g Self Raising flour
2 tbsp Caster sugar
1 tsp Baking Powder
130ml Milk
1 medium egg
Small punnet of blueberries (about 150g)
Maple Syrup to serve
Method:
1 – Mix the flour, caster sugar and baking powder together.
2 – Add the milk and egg, whisk together until combined, now add your blueberries and fold together.
3 – Leave the mix for 2-3 minutes, put a frying pan on a medium heat add tbsp of oil.
4 – Add 1-2 spoonfuls of mix to the pan and gently shape into a circle, repeat until the pan has four pancakes, cook on a medium heat for 1-2 minutes on each side.
5- Remove from the pan and serve straight away and drizzled with maple syrup.
