Pecan Waffle Sticks with a Toffee Dipping Sauce

Amazing recipe to make with kids: Pecan Waffle Sticks with a Toffee Dipping Sauce. Delicious nutty waffle sticks served with a warm toffee dipping sauce, pure heaven!

Makes 36 waffle sticks

What you will need…

• 240g plain flour

• 100g dark brown sugar

• 60g toasted pecan nuts, chopped

• 1 ½ tsp baking powder

• ½ tsp bicarbonate of soda

• ½ tsp cinnamon

• 300ml milk

• 3 large eggs, separated

• 2 tbsp maple syrup

• 35g butter, melted

• Small amount of vegetable oil for greasing

Toffee sauce

• 50g dark brown sugar

• 20g unsalted butter

• 1 tsp vanilla extract

• 1 tbsp maple syrup

• 125ml double cream

How to make them…

1. In a medium sized bowl combine the plain flour and the sugar together if the sugar
is slightly lumpy; use your fingertips to break it up. Add the nuts, baking powder,
bicarbonate of soda, and cinnamon and whisk to combine.

2. In a separate bowl combine the milk, egg yolks, maple syrup and melted butter
and whisk together. Add this to the dry ingredients and mix together. In a separate
bowl beat the egg whites until they form stiff peaks and add this to the mixture
and fold together gently, making sure there is no visible egg white remaining.

3. Brush the plates of the Waffle Stick Maker with vegetable oil and heat until
the green light appears. Pour approximately 1 measuring cup of batter over
the plates from one side to the other and using a knife very carefully spread
the batter over the plates making sure the batter fills all the moulds, do not overfill
otherwise the machine will pop open.

4. Bake the waffle sticks for 2 – 3 minutes, the waffles should be golden and crispy.
Remove the waffles from the machine and place them on a wire rack or to keep
them crispy in a low oven directly on the oven shelf. Repeat the process above
for the remaining batter mix.

To make the toffee sauce, add the sugar, butter, vanilla and maple syrup to a small
saucepan and heat gently until it melts and turns a toffee colour, add the cream
and stir well, bubble until it thickens and remove from the heat, serve warm in a serving bowl with nutty waffle sticks for dipping.

We used the Waffle Stick Maker by www.lakeland.co.uk which is great quality as well as stylish with its pink colour. It’s an ideal present for a housewife and beyond. This is a recipe you can make with the kids.
