CRUNCHY CARAMELISED APPLES AND VANILLA

This recipe is simpler than a traditional apple crumble and absolutely delicious served with Vanilla Ice Cream.

Servings: 4

Prep Time: 25 mins

Ingredients:

4 scoops of Vanilla ice cream (100g/200ml). For this recipe we used Carte D’Or Vanilla Ice Cream

400g cooking apples, peeled, cored, sliced and diced

50g butter

50g light brown sugar

½ tsp cinnamon or ¼ tsp ground cloves

125g biscuits, crumbled

20g chopped toasted hazelnuts

20g chopped walnuts

100g caramel sauce

SAUTÉ the apples in a large frying pan over a medium heat with the butter, sugar and cinnamon for approximately 15 minutes, until the apple is soft in texture.

MIX together the crumbled biscuits and chopped nuts.

WARM the caramel sauce in a small pan or in the microwave for 1 minute.

DIVIDE the apple mixture between 4 serving plates or ramekins.

SPRINKLE over the biscuit mix.

SCOOP balls of Carte D’Or Vanilla Ice Cream and place 1 on top of the biscuit mix on each plate.

SERVE drizzled with the hot caramel sauce.
