Here is a simple recipe for the Zuppa di farro – Spelt Soup – from Tuscany.
Ingredients:
2 tbsp farro per person
1 onion
2 carrots
Celery
1 tomato
1 courgette
small amount of spinach
2 pork sausages mushrooms
Method
Cook farro (spelt) for 20 minutes in water and a little salt.

Quick and tasty and a good way to get your kids to eat some almonds. These cookies are called Amaretti and they are typical from both Sicily and Sardinia.
Take 200 g ground almonds and 200 g sugar. Mix together. add some lemon rind or a tsps of cinnamon.
Fluff up 2 egg whites and add to almond mix.
