Recipe: Caramel Apple Strudel parcels

These wonderful individual Caramel Apple Strudel parcels could be served with Vanilla Ice Cream but the caramel flavour makes them extra special.This is the perfect recipe for a stay at home mum and a clever idea on what to make with fresh apples for kids.

The recipe

Serves: 4

Prep Time: 45 mins

Chilling time: 10 mins

Ingredients:

4 scoops of Carte D’Or Dulce de Leche Ice Cream (100g/200ml)

1 large or 2 medium cooking apples, peeled, cored and sliced

25g light brown sugar

25g sultanas

¼ tsp mixed spice

15g walnuts chopped

6 sheets Filo pastry

35g butter

Icing sugar for dusting

Method:

PLACE the apple, sugar, sultanas, mixed spice and 1 tablespoon water into a medium saucepan. Cover and cook over a medium heat for 7 – 8 minutes, stirring once until the apples are just softening. Remove from the heat and allow to cool for 10 minutes.

ADD the walnuts to the apple mixture.

PREHEAT the oven to 190°C/170°C fan assisted/Gas Mark 5.

MELT the butter in a small pan or in the microwave.

BRUSH each sheet of Filo pastry with the melted butter and cut in half horizontally. Allow 3 pastry sections per strudel, placing 1 sheet horizontally, another vertically and the other diagonally over one another.

DIVIDE the cooked apple between the 4 pastry sections. Fold the sides in first, covering the apple. Fold up the bottom section. Fold the top section over and under the bottom. Place on a baking tray and brush each strudel with the remaining melted butter.

COOK the strudels in the preheated oven for 20 minutes.

PLACE each strudel on a dessert plate and dust with icing sugar.

SCOOP 1 ball of Carte D’Or Dulce De Leche Ice Cream and place with each strudel. Serve immediately.
