Recipe: German Apple Pancake – Apfelpfannkuchen

I totally love this recipe for German Apple Pancake, the so-called Apfelpfannkuchen. It is very simple to make even my 8-year-old son can make and has low flour and low sugar content. It is delicious and not so fattening actually. I got this recipe from an old acquaintance from Germany and it is apparently authentic.

Ingredients

50g butter, to be melted

2 tsp sunflower oil

2 large apples (to be peeled, and sliced)

cinnamon (to your taste – this cake is good even without cinnamon. This spice gives it a Christmassy feel)

75g plain flour

50g brown sugar

15g caster sugar

3 large eggs

140 ml semi-skimmed milk

1/4 tsp vanilla extract (if you don’t have it, it doesn’t matter – it is a simple cake and it tastes good even with the basic ingredients).

 

Method

1. Bake the apples mixed with the spice and only half of the butter and oil in a tray with baking paper – 220 C in the oven.

2. In the meantime, mix the flour in a bowl, a pinch of salt, the rest of the butter, the eggs and the milk.

3. Mix all the ingredients until you make a thick batter.

4. When the apples are slightly gold but not all cooked, remove the tin from the oven and pour over the batter.

5. Return to the oven and back for 15 minutes or until the pancake is golden brown.

6. When it’s cooked, turn it upside down and add icing sugar to your taste. You can serve it hot or cold and it tastes equally great.

For a wedge of pancake (80g), you are looking at 120-130 calories.
